Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet ingredients
  • 2 ripe bananas mashed
  • 1 cup zucchini shredded, lightly squeezed if very wet
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 cup neutral oil
  • 1 teaspoon vanilla extract
Optional add-ins
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup semi-sweet chocolate chips optional

Equipment

  • 1 9x5-inch loaf pan
  • 1 mixing bowl large
  • 1 mixing bowl medium
  • 1 whisk
  • 1 spatula
  • 1 box grater for shredding zucchini
  • 1 wire rack for cooling

Method
 

  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper if desired.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, mash the bananas. Add the shredded zucchini, eggs, granulated sugar, brown sugar, oil, and vanilla, and whisk until well combined.
  4. Add the dry ingredients to the wet ingredients and stir gently with a spatula just until no dry streaks remain.
  5. Fold in the walnuts, pecans, or chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50 to 55 minutes, or until the loaf is golden-brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter or the loaf can turn dense. Lightly squeeze very wet zucchini before adding. Cool completely before slicing for the neatest texture. Optional add-ins will change the nutrition values.
