Ingredients
  

For the whipped ricotta
  • 2 cups whole milk ricotta cheese preferably well-drained
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper freshly ground
For topping and serving
  • 2 to 3 tablespoons honey for drizzling
  • 1 tablespoon fresh thyme or basil chopped
  • black pepper extra cracked, to taste
  • 12 slices baguette toasted into crostini

Equipment

  • 1 food processor for whipping the ricotta smooth
  • 1 fine-mesh strainer optional, for draining wet ricotta
  • 1 sheet pan for toasting the baguette slices
  • 1 serving bowl for presenting the dip

Method
 

Prepare the crostini
  1. Toast the baguette slices until crisp and lightly golden, then let them cool slightly.
Make the dip
  1. If the ricotta is very wet, drain it briefly in a fine-mesh strainer to remove excess moisture.
  2. Add the ricotta, olive oil, lemon juice, kosher salt, and black pepper to a food processor.
  3. Blend for 1 to 2 minutes, scraping down the sides as needed, until smooth, airy, and creamy.
  4. Spoon the whipped ricotta into a shallow serving bowl and create soft swirls on top with the back of a spoon.
Finish and serve
  1. Drizzle the dip with honey, then top with chopped herbs and extra cracked black pepper.
  2. Serve immediately with the toasted crostini.

Notes

Drain watery ricotta for the best fluffy texture. Add honey and herbs just before serving for the freshest presentation. Lemon zest or a small grated garlic clove can be added for extra flavor.
