Prepare the crostini
- Toast the baguette slices until crisp and lightly golden, then let them cool slightly.
Make the dip
- If the ricotta is very wet, drain it briefly in a fine-mesh strainer to remove excess moisture.
- Add the ricotta, olive oil, lemon juice, kosher salt, and black pepper to a food processor.
- Blend for 1 to 2 minutes, scraping down the sides as needed, until smooth, airy, and creamy.
- Spoon the whipped ricotta into a shallow serving bowl and create soft swirls on top with the back of a spoon.
Finish and serve
- Drizzle the dip with honey, then top with chopped herbs and extra cracked black pepper.
- Serve immediately with the toasted crostini.
Notes
Drain watery ricotta for the best fluffy texture. Add honey and herbs just before serving for the freshest presentation. Lemon zest or a small grated garlic clove can be added for extra flavor.
