- Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and rolled oats.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and slightly lighter in color, about 2 to 3 minutes.
- Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.
- Add the dry ingredients to the wet ingredients and mix just until combined.
- Fold in the chocolate chips, reserving a few for the tops if desired.
- Scoop the dough into 2-tablespoon portions and place them 2 inches apart on the prepared baking sheets.
- Bake for 10 to 12 minutes, until the edges are lightly golden and the centers still look slightly soft.
- Cool the cookies on the baking sheets for 5 minutes.
- Transfer to a wire rack to cool completely.
Notes
For the softest cookies, do not overbake. If your kitchen is warm or your dough feels loose, chill it for 20 to 30 minutes before baking. Use old-fashioned rolled oats for the best chewy texture.
