- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment if desired.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, whisk the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
- Stir in the shredded zucchini. If the zucchini is very wet, lightly blot it first but do not squeeze it completely dry.
- Add the dry ingredients to the wet ingredients and stir just until combined. Fold in the chopped nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 55 minutes, until a tester inserted in the center comes out clean or with a few moist crumbs.
- Cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Do not overmix the batter. Lightly blot very watery zucchini, but keep some moisture for a tender loaf. The bread tastes even better the next day and freezes well.
