Ingredients
  

For the bites
  • 24 mini phyllo shells
  • 8 ounces brie cheese cut into 24 small pieces, rind trimmed if preferred
  • 6 slices bacon cooked crisp and finely chopped
For finishing
  • 3 tablespoons pure maple syrup
  • 1 tablespoon pecans chopped, optional
  • 1 teaspoon fresh thyme leaves optional

Equipment

  • 1 Baking sheet or mini muffin pan
  • 1 knife for cutting brie
  • 1 Cutting board
  • 1 small spoon for drizzling syrup

Method
 

  1. Preheat the oven to 375°F. Arrange the mini phyllo shells on a baking sheet or in a mini muffin pan.
  2. Place one piece of brie into each shell, filling each cup generously without overstuffing.
  3. Top each shell with a small amount of chopped bacon, pressing it lightly into the brie.
  4. Bake for 10 to 12 minutes, until the pastry is crisp and golden and the brie is soft and melty.
  5. Let the bites cool for 2 to 3 minutes after baking.
  6. Drizzle the warm bites lightly with maple syrup.
  7. Top with chopped pecans and thyme leaves, if using, and serve warm.

Notes

Serve shortly after baking for the best texture. You can prep the bacon and cut the brie ahead of time. For a variation, add a tiny spoonful of fig jam before the brie.
