Make the soup
- Heat the olive oil in a large soup pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook for 6 to 8 minutes, stirring occasionally, until softened and the onion is translucent.
- Stir in the garlic, kosher salt, black pepper, oregano, and thyme. Cook for 1 minute, until fragrant.
- Pour in the chicken broth and add the bay leaf. Bring to a gentle boil, then reduce the heat and simmer for 10 minutes.
- Add the shredded chicken and ditalini. Simmer for 8 to 10 minutes, stirring occasionally, until the pasta is tender.
- Remove the bay leaf. Stir in the lemon juice and chopped parsley. Taste and adjust seasoning with more salt and pepper if needed.
- Ladle into bowls and serve hot with toasted bread and optional grated Parmesan.
Notes
For the best texture, avoid overcooking the pasta. If making ahead, store the pasta separately or add extra broth when reheating. Rotisserie chicken works well as a shortcut.
