Prepare the bowl
- Add the Greek yogurt to a serving bowl and smooth the top with the back of a spoon.
Caramelize the banana
- Heat a small nonstick skillet over medium heat and add the coconut oil or butter.
- Arrange the banana slices in a single layer, drizzle with maple syrup, and cook for 1 to 2 minutes per side until glossy and lightly golden at the edges.
- Remove the skillet from the heat and spoon the warm banana slices and any syrupy bits over the yogurt.
Finish and serve
- If needed, warm the almond butter briefly so it loosens, then drizzle it over the bowl.
- Top with chopped walnuts, flaky sea salt, and optional cinnamon or extra maple syrup. Serve immediately.
Notes
Use a ripe but firm banana so the slices hold their shape in the pan. Greek yogurt or skyr works best for a thick, high-protein base. Caramelize the banana just before serving for the best texture.
