Healthy Zucchini Bread

Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/2 cup old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt
Wet Ingredients
  • 2 large eggs
  • 1/2 cup honey
  • 1/3 cup olive oil
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
Zucchini and Mix-Ins
  • 1 1/2 cups zucchini shredded and lightly squeezed dry
  • 1/2 cup walnuts chopped

Equipment

  • 1 9x5-inch loaf pan
  • 1 box grater
  • 2 mixing bowls
  • 1 whisk
  • 1 spatula

Method
 

  1. Preheat the oven to 350°F. Lightly grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Shred the zucchini using the large holes of a box grater. Gently squeeze out some of the extra moisture so it is damp but not dripping.
  3. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, oats, baking soda, baking powder, cinnamon, and salt.
  4. In a large bowl, whisk the eggs, honey, olive oil, Greek yogurt, and vanilla until smooth.
  5. Fold the shredded zucchini into the wet mixture. Add the dry ingredients and stir gently just until combined.
  6. Fold in the chopped walnuts without overmixing.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Bake for 48 to 52 minutes, or until the loaf is golden brown and a tester inserted in the center comes out clean or with a few moist crumbs.
  9. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Lightly squeeze the zucchini to avoid a gummy loaf. Do not overmix the batter. The bread slices best once fully cooled and keeps well for several days.
