Ingredients

For the zucchini
  • 3 medium zucchini sliced into rounds about 1/3 inch thick
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the cheese topping
  • 1 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese finely grated
  • 1 tablespoon parsley chopped, or use a light sprinkle of dried herbs

Equipment

  • 1 oven
  • 1 mixing bowl
  • 1 knife for slicing zucchini
  • 1 Cutting board
  • 1 baking dish or sheet pan

Method

  1. Preheat the oven to 425°F. Lightly grease a baking dish or line a sheet pan with parchment paper.
  2. Wash and dry the zucchini, then slice into even rounds about 1/3 inch thick.
  3. Place the zucchini rounds in a mixing bowl. Add the olive oil, minced garlic, salt, and black pepper, then toss until evenly coated.
  4. Arrange the zucchini in a single slightly overlapping layer in the prepared baking dish or on the sheet pan.
  5. Sprinkle the mozzarella evenly over the zucchini, then top with the Parmesan.
  6. Bake for 18 to 22 minutes, until the zucchini is tender and the cheese is melted and golden in spots.
  7. For deeper browning, broil for 1 to 2 minutes at the end, watching closely.
  8. Let rest for 2 to 3 minutes, then finish with parsley or dried herbs and serve hot.

Notes

Slice the zucchini evenly for consistent baking. Do not overcrowd the pan or the zucchini may steam and become watery. For the best texture, bake just before serving.
