Ingredients
  

For the zucchini base
  • 2 medium zucchini grated
  • 2 large eggs
  • 1 cup mozzarella cheese shredded
  • 1/2 cup all-purpose flour
  • 1/4 cup Parmesan cheese grated
Seasonings
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the topping
  • 1/2 cup mozzarella cheese shredded
  • 1 tablespoon parsley chopped, optional

Equipment

  • 1 box grater for grating zucchini
  • 1 mixing bowl
  • 1 kitchen towel for squeezing zucchini dry
  • 1 Baking sheet small sheet pan preferred
  • 1 Parchment paper
  • 1 spoon or spatula for mixing and spreading

Method
 

  1. Preheat the oven to 425°F and line a baking sheet or small sheet pan with parchment paper.
  2. Grate the zucchini and squeeze out as much moisture as possible using a clean kitchen towel or paper towels.
  3. Place the squeezed zucchini in a mixing bowl. Add the eggs, 1 cup mozzarella, flour, Parmesan, garlic powder, oregano, salt, and black pepper. Stir until evenly combined.
  4. Spread the mixture onto the prepared pan in an even rectangle about 1/2 inch thick.
  5. Bake for 15 minutes, until the surface is set and the edges begin to turn lightly golden.
  6. Remove from the oven, sprinkle the remaining 1/2 cup mozzarella over the top, and return to the oven for 8 to 10 minutes until the cheese is melted and browned in spots.
  7. Let the baked slab rest for 5 minutes, then cut into rectangular breadsticks.
  8. Garnish with chopped parsley if desired and serve warm.

Notes

Squeeze the zucchini very well to avoid soggy breadsticks. Spread the mixture evenly for consistent baking. Reheat in the oven for the best texture.
