Prepare the dish
- Preheat the oven to 375°F. Lightly butter a 10-inch cast-iron skillet or similar 2-quart baking dish.
Make the filling
- In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, cornstarch, vanilla extract, cinnamon, and salt.
- Toss gently until the peaches are evenly coated, then transfer the mixture to the prepared skillet and spread into an even layer.
Make the topping
- In a separate bowl, stir together the oats, flour, brown sugar, cinnamon, and salt.
- Pour in the melted butter and mix until moist, crumbly clusters form.
Assemble and bake
- Sprinkle the crumble topping evenly over the peaches without pressing it down.
- Bake for 35 to 40 minutes, until the filling is bubbling around the edges and the topping is deep golden brown. Loosely tent with foil near the end if needed.
- Let the peach crisp rest for 10 to 15 minutes before serving.
- Serve warm, ideally with vanilla ice cream if desired.
Notes
Use ripe but still firm peaches for the best texture. If using frozen peaches, thaw and drain well first. Let the crisp rest before serving so the filling can thicken slightly.
