- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper.
- Shred the zucchini and gently squeeze out excess moisture. It should remain moist but not dripping wet.
- In a medium bowl, whisk together the gluten-free flour blend, almond flour, baking soda, cinnamon, baking powder, and salt.
- In a large bowl, whisk the eggs, brown sugar, maple syrup, oil, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the shredded zucchini and the chopped nuts, if using. The batter will be thick.
- Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle with gluten-free oats, if using.
- Bake for 50 to 55 minutes, until the top is deep golden brown and a toothpick inserted near the center comes out with a few moist crumbs.
- Cool the loaf in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Lightly squeeze the zucchini for the best texture. Use a dependable gluten-free flour blend with xanthan gum. Cool completely before slicing so the crumb can set.
