Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon fine salt
Wet Ingredients
  • 1/2 cup unsalted butter melted and slightly cooled
  • 3/4 cup light brown sugar packed
  • 2 large eggs
  • 1/2 cup apple cider
  • 1/3 cup plain Greek yogurt or sour cream
  • 1 teaspoon vanilla extract
Apple and Finish
  • 1 cup apple peeled and finely diced
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon for topping
  • 2 tablespoons powdered sugar for dusting

Equipment

  • 1 9x5-inch loaf pan lined with parchment if desired
  • 2 mixing bowls one medium and one large
  • 1 whisk
  • 1 rubber spatula
  • 1 wire rack for cooling

Method
 

  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk the melted butter and brown sugar until smooth. Add the eggs, apple cider, Greek yogurt, and vanilla extract, and whisk until fully combined.
  4. Fold the dry ingredients into the wet ingredients just until no dry streaks remain. Gently fold in the diced apple.
  5. Transfer the batter to the prepared loaf pan and smooth the top. Stir together the granulated sugar and 1/2 teaspoon cinnamon, then sprinkle evenly over the batter.
  6. Bake for 50 to 55 minutes, until the loaf is golden brown and a tester inserted into the center comes out with a few moist crumbs.
  7. Cool the loaf in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  8. Dust the cooled loaf with powdered sugar, slice, and serve.

Notes

Do not overmix the batter. Use a firm apple such as Honeycrisp or Fuji. Tent loosely with foil if the top browns too quickly. Add powdered sugar only after the loaf has cooled completely.
