Ingredients
  

For the salmon
  • 4 salmon fillets about 6 ounces each
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
For the brown sugar glaze
  • 3 tablespoons brown sugar packed
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice fresh
For finishing
  • 1 tablespoon fresh parsley or chives chopped
  • 4 lemon wedges for serving

Equipment

  • 1 Baking sheet or shallow baking dish lined with parchment if desired
  • 1 Small mixing bowl
  • 1 whisk
  • 1 Pastry brush or spoon for applying glaze

Method
 

  1. Preheat the oven to 400°F. Line a baking sheet or shallow baking dish with parchment if desired.
  2. Pat the salmon fillets dry and arrange them skin-side down if using skin-on fillets. Rub lightly with olive oil and season with salt and black pepper.
  3. In a small bowl, whisk together the brown sugar, soy sauce, Dijon mustard, minced garlic, and lemon juice until smooth.
  4. Brush or spoon the glaze evenly over the tops of the salmon fillets.
  5. Bake for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork.
  6. For extra caramelization, broil for 1 to 2 minutes at the end, watching closely to prevent burning.
  7. Let the salmon rest for 2 minutes, then spoon any pan juices over the top. Finish with chopped herbs and serve with lemon wedges.

Notes

Check the salmon early to avoid overcooking. Thicker fillets may need the full baking time. For a less sweet glaze, reduce the brown sugar slightly and add a little more lemon juice.
