Ingredients
  

For the Baked Brie
  • 1 8-ounce wheel brie cheese
  • 1 teaspoon olive oil for greasing the dish, optional
For the Topping
  • 3 tablespoons honey plus more for serving if desired
  • 1/4 cup walnuts chopped
  • 1/4 cup pecans chopped
  • 2 tablespoons dried cranberries or dried cherries chopped if large
  • 1 teaspoon fresh rosemary finely chopped
  • 1 pinch flaky sea salt optional
For Serving
  • 1 loaf baguette sliced, or use crostini or assorted crackers
  • 1 apple or pear slices optional

Equipment

  • 1 oven
  • 1 small oven-safe baking dish or small baking sheet lined with parchment
  • 1 Small mixing bowl
  • 1 spoon for topping and drizzling

Method
 

  1. Preheat the oven to 350°F. Lightly grease a small oven-safe dish or line a small baking sheet with parchment paper.
  2. Place the wheel of brie in the prepared dish.
  3. In a small bowl, stir together the chopped walnuts, pecans, dried cranberries, and rosemary.
  4. Bake the brie for 12 to 15 minutes, until the center feels soft and the inside is warm and melty.
  5. Remove the brie from the oven and spoon the nut mixture over the top.
  6. Drizzle with honey and finish with flaky sea salt if using.
  7. Let rest for 2 to 3 minutes, then serve warm with sliced baguette, crackers, and optional apple or pear slices.

Notes

Do not remove the rind before baking. Start checking the brie at 12 minutes to avoid overbaking. Walnuts, pecans, pistachios, or almonds all work well. Prep the topping ahead, but bake the brie just before serving for the best texture.
