Ingredients
  

For the baked brie
  • 1 wheel brie cheese about 8 ounces
  • 1/3 cup fruit chutney
  • 1/4 cup almonds chopped
  • 1 teaspoon honey optional
For serving
  • 1 box round crackers or sliced baguette
  • 1 cup green grapes
  • 1 cup strawberries whole

Equipment

  • 1 oven
  • 1 small baking dish or oven-safe plate
  • 1 spoon for topping the brie
  • 1 knife optional, for lightly scoring the rind

Method
 

Prepare the brie
  1. Preheat the oven to 350°F. Line a small baking dish or oven-safe plate with parchment if desired for easier cleanup.
  2. Place the brie wheel in the baking dish. Lightly score the top rind with a knife if desired, being careful not to cut too deeply.
  3. Spoon the chutney over the top of the brie and spread it gently so it stays mostly centered. Sprinkle the chopped almonds over the chutney and drizzle with honey if using.
Bake and serve
  1. Bake for 12 to 15 minutes, until the brie is soft in the center and the topping looks glossy.
  2. Let the baked brie rest for 3 to 5 minutes before serving.
  3. Serve warm with crackers or sliced baguette, green grapes, and strawberries.

Notes

Do not overbake the brie; start checking at 12 minutes. Apricot, fig, or mango chutney all work well. Toast the almonds first for extra flavor if desired.
