Apple Cinnamon Monkey Bread

Ingredients
  

For the monkey bread
  • 2 cans refrigerated biscuit dough cut into quarters
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup unsalted butter melted
  • 3/4 cup brown sugar packed
For the apple topping
  • 2 medium apples peeled and diced small
  • 1 tablespoon unsalted butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

  • 1 vanilla glaze optional
  • 1 whipped cream optional
  • 1 vanilla ice cream optional

Equipment

  • 1 bundt pan well greased
  • 1 large mixing bowl or large zip-top bag
  • 1 small skillet for apple topping
  • 1 measuring cups and spoons
  • 1 serving plate for inverting the bread

Method
 

  1. Preheat the oven to 350°F. Generously grease a bundt pan.
  2. Combine the granulated sugar and 1 tablespoon cinnamon in a large mixing bowl or zip-top bag.
  3. Cut each biscuit into quarters and toss the pieces in the cinnamon sugar until coated.
  4. Arrange half of the coated biscuit pieces in the prepared bundt pan.
  5. Stir together the melted butter and 3/4 cup brown sugar, then spoon about half over the biscuit layer.
  6. Add the remaining biscuit pieces to the pan and pour the rest of the butter-brown sugar mixture over the top.
  7. Bake for 35 to 40 minutes, until deep golden brown and set in the center. Tent loosely with foil near the end if needed to prevent over-browning.
  8. While the bread bakes, melt 1 tablespoon butter in a small skillet over medium heat. Add the diced apples, 2 tablespoons brown sugar, and 1/2 teaspoon cinnamon.
  9. Cook for 5 to 7 minutes, stirring occasionally, until the apples are tender and the sauce is glossy. Stir in the vanilla extract and remove from the heat.
  10. Cool the monkey bread in the pan for 10 minutes, then carefully invert onto a serving plate.
  11. Spoon the warm apple topping over the monkey bread and serve warm.

Notes

Grease the bundt pan well for easy release. Firm apples such as Granny Smith or Honeycrisp work best. Serve warm for the softest pull-apart texture. Nutrition is an estimate and varies by biscuit brand.
